Sweet Chilli Sauce
› 3 large red chillies, finely chopped (seeds and all)
› 125ml (4fl.oz) rice vinegar
› 1 teaspoon salt › 185g (6 oz) sugar
› 1 clove garlic, crushed Put all the ingredients into a little saucepan over a low heat. Stir to dissolve the sugar. Bring to the boil and cook for 5-6 minutes or until the mixture thickens to a syrupy texture. Cook and fill into a jam jar or bottle.
Chilli Oil – Olio Piccante Pour a little oil out of the bottle and then drop 1-6 chillies down into the bottle, top up with oil and allow to infuse for a few days before using.
